Too it to 115* and then switched to direct and seared it for a crust. Went a bit long on the sear for my liking, but it was still good.

I injected one yesterday w/some mojo and it's sitting in a vacuum seal bag now in the rest of the marinade. I was going to cook it today, but wife made a big pot of chicken tortilla soup yesterday and we're a bit overrun w/other solid leftovers, so I'm gonna let it stew another day and smoke it tomorrow. I was going to use some of it to make a red pozole, but that's how I felt yesterday. We'll see how I feel tomorrow. Or Tuesday. -
