What do you do???

    I put it together and when I was finished it was off about 4 inches I was so worried about making sure I didn't get an under or over bite I got off line. At this point I'm going to ride it out until it's time to replace the gaskets.

    I rarely use the dfmt anyway. :) Just leave it wide open and close the lower vent more. 

    I hate it when I go to the kitchen for food and all I find are ingredients!

    I'm curious about the lowest temp you can expect to hold consistently without the dfmt? I use one except for pizza and steaks, but would think it would be difficult to hold below 300 without something on there.

    I don't know, never tried it. I mostly do 350 and higher cooks. Occasionally a lo n slow butt, but not often. That's the only time I use the daisy. Butts are okay at 350 anyway. 

    Try it. Light lump as you normally would for a lo n slo. Once fire is established, close the bottom vent almost all the way, leave dfmt off and see what you get. I keep saying I will try, but somehow never have.

    Go to Home Depot and buy a Weber fire grate. No big deal.

  • This was last year. I just picked out some of the biggest pieces of lump and hand stacked it without a grate and cooked like it was. Worked fine but it was always just quick cooks with fish filets. I would have had to go buy something for a low and slow but we were at the beach so we wanted to enjoy all the fish and seafood we could.

    I just take a jumbo Joe to the beach. Weighs 5lbs, cools down in minutes and grills just fine. I've done the egg thing too and it was fun. I've also dug a hole in the beach and buried 2 pork shoulders. That was quite a sh!t show.

  • I had just gotten my small and was all fired up about it. I'll carry something lighter next time.

    I cracked my MiniMax plate setter at the beach.  Without a dealer in a 100 mile radius, I too had to improvise:

    @Carolina Q I lit it the same as I would with any other low and slow closed the damper at the bottom almost all the way and she is still holding steady at 250. Meat is at about 183 so won't be long now.
