First post. Chuck Roast and Tators

This is my first post. I have been egging for 10 months and I'm hooked. Anyway these are chuck roast with a wet rub, olive oil, garlic, thyme, chili pepper. Cooked at about 250 for 4 1/2 hours. Added Yukon gold potatoes last hour and a half. Mashed the potatoes and cut up the roast and added gravy. Oh and Lima beans on the side.
