Those look spectacular. What an unreal find Cen-Tex - you are clearly good people.

There are some in here that would you to task over that. It's been fun though. Grims is on a truck and in looking for a box big enough for SGH.Spaightlabs said:Those look spectacular. What an unreal find Cen-Tex - you are clearly good people.Keepin' It Weird in The ATX FBTX -
A small piano crate would handle SGH's. I'd suggest an RTIC cooler, but you couldn't get one before the brisket got freezer burn and it'd probably thaw out before it got there.

He's 5 min from my house every Sunday at the farmers market. Let me know if you ever want me to grab and hold anything for you. I'll meet you whenever you come through.Photo Egg said:
Thank you. Just wanting an idea on price to compare to the other high end company we talk about on here. The Cen-Tex Smoker said:
They don't ship right now so it's all local pick up. He says most of the big cuts are $10 per lb and individual steaks are about $20 for 8-10 oz cuts. The big cuts are pretty cheap but that's pretty steep for the steaks. Considering he only has sirloin, flank, skirt, and hangar for the most part. He sells all his loins to the Driskill Hotel so there are very rarely any ribeyes or strips. I'll talk to him when I go out there today and see if I can get any more information. For now, it's a local pick up deal or I can ship them to you if you really want to try something.Photo Egg said:If they have a general price list can you you ping me on the side?
Hope you have recovered from Space City Eggfest...Your group sure put out some outstanding samples.
Yea, the larger cuts are priced well. Does not surprise me that his smaller cuts are big bucks as I'm sure he can get primo prices at the Austin farmers market.
I will try and line up some stuff for my next run in the Austin Area.
Thanks again...Keepin' It Weird in The ATX FBTX -
This is my favorite part of this whole deal. You have no idea how this speaks to me. Hilarious.chrisc133 said:Keepin' It Weird in The ATX FBTX -

Arts and crafts day at casa Centex. Could not find a cooler big enough to ship this thing in so I went to Home Depot and bought a sheet of foam insulation and built a box. The brisket is nestled in with fresh dry ice and is on it's way to Saucier MS as we speak. Can't wait to see what Scottie does with it.

And the icing on the cake

I filled the rest up with butcher paper, another piece of insulation and then shut it all in with an insulated top with 8.5 lb of fresh dry ice. Hope that gets it there in good shape. I imagine it will.Keepin' It Weird in The ATX FBTX
