    Took a couple hours to put the pack on and hike some local trails. Got back and the temp dipped to 225. No worries, cracked the bottom vent and the s/w cap a little more. If I need to bump above 300 for the last hour or so it won't hurt anything. It sure does smell good outside! Now, to tackle the slaw and beans.

    Bumped the the temp up in the egg to 350 and she's holding steady. Smallest butt is at 170. I need to leave in 3 hours so hopefully we're on track.

    So I woke up this morning to this:

    Bummer, smoke went out last night. Not exactly sure why since I had S/W cap and bottom vent wide open. Maybe someone with more experience with one of these can explain better. I'm re-lighting at both ends and will be back to smoking soon.

    Zooming in at the before and after photos, it appears there is a void in the vicinity where the fire died.

    Potato-Mac is something they serve in Hawall as a side with just about everything. We spent a couple weeks there over the holidays and I had a chance to sample many variations. I decided it was something I wanted to try so I searched the inter webs and then kinda came up with my own version. It's basically a pound of whatever kind of elbow Mac you prefer ( I use cavatint), potatoes, red pepper diced small, a sweet onion grated, grated carrot, mayo (lots of it), and s&p. It's got to be loaded with mayo so if you make it the day before and let it marinate, so to speak, the next day it needs to be re-mayoed  so it's nice and creamy.

    A good time was had by all. A few goodie bags were taken home but the 5 butts were about right, beans too. Had extra Potato-Mac but if I made 1 batch less there might have been too little. Lots of extra slaw-next time I'll scale it back to 2 smaller heads of cabbage. There were extra brownies but they'll get eaten. The flow of people was good too. Not everyone was there all at once since a bunch were at the Wells Fargo golf tournament and came in later. It gave us plenty of time to keep everything stocked. I think the pork puller was the hit of the party. Everyone was fascinated with it!  Thanks for following along!

    Looks like a feast that you killed!!  Spectacular work brother!  Those kids went home for the first time ever, not needing a Snack!  Great job!

    I always put the chips in the oven to make sure they are good and dry- used to have issues with them going out but the oven trick solved that problem.
