Brisket, beer and ...

No SRF here-a Costco prime (10 lbs post-trim) that punched home at around 0.7/hrs/lb at a calibrated dome of around 270*F.  I'm all good as I am enjoying late lunch/early dinner and anything else while consuming.  No great pics here but thought I would at least toss it out there.




Louisville; Rolling smoke in the neighbourhood.  Life is too short for light/lite beer!  Seems I'm livin in a transitional period. CHEETO (aka Agent Orange) makes Nixon look like a saint.

    Inbetween Iowa and Colorado, not close to anything remotely entertaining outside of football season.

    Upon further review, the recent high-speed brisket cooks that I have seen (and the above is right in there) can at least be somewhat attributed to the need to lay it over a brick for the first few hours of the cook (waiting on shrinkage...). This elevates a good part of the hunk of cow closer to the dome and a hotter environment.  At least that's my unscientific theory for why I am seeing these quicker cooks.  So, if you have to use a rib-rack, brick or other arrangement to ensure it all fits then just be ready for a shorter cook time...til it's not ;)

    @SGH - Better to be lucky than good any day.  However, thanks for the nod.  Sometimes my phone takes a decent pic-regardless of the look, it tasted great.

    @lousubcap Cook looks awesome!  Something I've done rather than putting a brick under the brisket is just cut off a piece of the flat and cook it above the packer on the AR.  I just use that little chunk to throw into beans then.
