I managed to make it to New Orleans safely this time. I'm at the KOA on Jefferson Highway in River Ridge.  I'm going to throw a CAB Prime ~16lb Brisket on around 8am. Should be ready to eat 5. If anyone wants to come feed some sticks with me or just drink a beer / eat some briskie and hang out; I'll be here all day! My wife is in class and I have our Daughter, but my mother-in-law is coming and will have baby under control!

    Those looks great!! I just did a couple of those "prime" pork chops in the vertical and they were amazing. Started on the bottom rack then finished on the 2nd rack. I'm loving food cooked over open fire.

    Scottie, potato skin toppings in mushrooms?  Oh, yes please.  I love cheddar.  A few jalapenos and those will be absolutely perfect.

    @SGH---Those look great. Looks like you were set up direct. How long did you cook the mushrooms? My wife is not a meat eater but I really think she would go for a couple of those. Great job.

    Exactly 11 minutes and 15 seconds at 425 degrees raised direct. With that said, don't try to cook them to time. Cook them until the cheese is melted through and through. The time will vary depending on how heavy or light that you stuff them. Also the type of cheese that you use will affect the timing. Just be sure the cheese runs free and shroons are done.

    Not that it really matters much, but I usually do stuffed anything indirect so I have more control over it. I only did these direct because I was doing steaks as well. If not for the steaks, the shroons would have been done indirect. Again, it's not a huge difference either way, I just prefer the control that indirect brings to the table. Just thought I would share that.

    Not sure what the going rate is at the moment because they are out of season. But they will be high. However give it 3 weeks and the Crawfish Gods will bless us. Season runs March-June down here. This is when they are the cheapest.
