    @jarc - A week ago I saw them for $4.50/lb boiled at Kenner Seafood.  I'll never buy them at that price.   The price will start dropping as Mardi Gras is over and the weather warms up.  And they get larger.  Around April is prime season.  The price for live will drop down to $1.35 or so (hopefully) and boiled is about twice that.

    I thought maybe with the milder winter months they may have started giving a little earlier this year. There is a place about an hour away from me that brings them in. They had some last weekend and were asking, no they were getting $4/#. Way to rich for my blood. Hell when we left LA we thought .79/# was high.

    @jarc yep, yesterday they were just over $4 for boiled and just under for live.  Looked good, though.  The price will drop dramatically after Easter (for both weather and religious reasons).

    Well. I'm over here so my wife can have the RV to stay in while she goes to class at Tulane for her MBA (every other weekend.) But while I'm here, I may as well bring my toy and smoke a brisket!!

    I'm also going to throw some ribs, stuffed shrooms, naked fatties, alligator sausage and an experimental SGH sausage loaf on! Ribs are going on now!

    The grocery I stopped by didn't have any full racks. Just St. Louis cut in half. Oh well, they will cook and eat just fine!

    Man that is too cool.   Can you use the vertical by itself for smaller cooks or is that just to hold/warm? 
    • There is a damper to run the heat straight up from the firebox and use it all by itself.
    • I can open a damper from the main chamber and it seems to run about 75 degrees less than the main chamber.
    • I could open both and run it higher than the main chamber
    • I can use it as a warmer and open the vents, but neither damper and it keeps about 125. With the bottom vent closed it runs right at 140. 
    • OR you can grill in it! There is a charcoal pan in there as well. 
    I'm sure by playing with the stacks and dampers there are more combinations I haven't thought about.  There is also a 18x18 sear grate in the firebox.

    The brisket flat was my favorite, followed closely by the sweet heat ribs.  Too bad you can't replicate that stuff again.
