I am so pleased with the final outcome. Best prime rib the family has ever had. I removed the meat when it hit 135, Kept it covered with foil on the counter for just over 30 minutes during which time it carried over up to 141. Sliced in 1/2 and 3/4 inch slices of perfection! This was a 6.5 pound boneless prime rib roast from Costco. I put it on at 250 for just over 4 hours until a probe read 135. I let it stand for 30 minutes on the counter covered in foil before cutting into it.THEBuckeye said:
