Rib rack redemption
20stone
Posts: 1,961
I did some beef ribs at Brisket Camp II that had a great flavor (thanks 44 Farms and @caliking ), but, since I slept in, they were rushed and not as done as I would have liked.
Today I am seeking redemption. As of 6 CT, I have 4 racks of beef ribs on the LBGE, ant the smoker is just now hitting temp (285, per this Aaron Franklin guy).
Thanks to my BIL, Mike, I am now rocking an Adjustable Rig. What a massive improvement spacewise!
I am having to babysit it for awhile, as I live in a mid rise and smuggled the LBGE onto the courtyard under the cover of night. The neighbors might be a little jumpy about the smoke, since we had a 6 alarm fire here a few weeks back. Dude, do I need a back yard.
Pics when it gets light.

Did the same last night. Love beef ribs. Nice setup. This pic was 2 hours in. Mine were done in 5.5 hours at 285 dome. Good luck Columbia, SC --- LBGE 2011 -- MINI BGE 2013 -
Great looking cook and major props for the cloak and dagger work with your BGE. Gonna be some great eats-beef ribs beat their pork cousins every time.
BTW-BIL deserves recognition as well. Rare a BIL hits the mark like that.Louisville; Rolling smoke in the neighbourhood. Life is too short for light/lite beer! Seems I'm livin in a transitional period. CHEETO (aka Agent Orange) makes Nixon look like a saint. -

If those are any much better then the last ones you cooked I'd be surprised. The brisket camp beef ribs are pretty damn good.

Or set set a fire, or crash a truck? -
Surprisingly, I made it over there without getting a ticket.
They were serious goodness. The best I've eaten, and a standard has been set. I only waited for a fork after being served out of respect for @20stone 's mom.#1 LBGE December 2012 • #2 SBGE February 2013 • #3 Mini May 2013A happy BGE family in Houston, TX. -
I'm glad you enjoyed. Your pork curry is out of this world. I finally cleared out enough room to shovel some down after eating way, way too much earlier. At least we had Janelle's gritty cheese to lighten things upcaliking said:Surprisingly, I made it over there without getting a ticket.

You wouldn't be the first. Plenty of land, though things are pretty tight in Houston, where I live. Out here you can either "farm to table", or get more extreme, raise your own and go "cradle to grave". I'd move out to the country so that I could raise my own, but it's hard to find lefties like me in small towns down here.... now Vermont or Oregon....(now only 16 stone)

Man those look incredible. Happy birfday by the way. Someone should have bough you a nest for your birfday
.
I'm just curious is that egg at an apartment of condo? Maybe the lack of nest is intentional to keep it hidden behind that trash can.Which came first the chicken or the egg? I egged the chicken and then I ate his leg. -
Yes, it is an an apartment, and got there under the cover of night. I normally have it at my dad's widow's house, but got special dispensation for a one-time deal.SmokeyPitt said:Man those look incredible. Happy birfday by the way. Someone should have bough you a nest for your birfday

I would have brought the table, too, but MsStone wanted an X5 instead of a pickup.
