Beef ribs

I saw some nice looking short ribs at Rouse's and asked the butcher if he had any uncut slabs. He did.   Look at these beauties.
My plan was to go slow 250 dome temp. I put them on at 1:00 pm, left the house, came back 2 hours later and my egg to was at 400 degrees. I closed the vents way down but its still around 350.
Aaaaggghhh!!!! Hope I didn't mess these up. My thermapen says meat temp is 170. 
I rubbed them with some of @20stone  's  brisket blend seasoning.
