Friendly Chicken Wing Competition I Won!

So a bunch of people in my neighbourhood have a family friendly cook off competition for the last 3 years, but it gets pretty serious if you ask me.  
This is the first time I have entered it, in previous years we have always been out of town, or not available.
This year Chicken Wings were the food of choice, the winner of the previous year gets too choose what the next year will be.
As soon as I heard it was Chicken Wings, I made sure I was available...  
Started off with buying fresh chicken wings with the flat and drumlets still attached, then discarding the tips and separating the 2 pieces incase the judges were more partial to the flat or drumlet?  I didn't want this to affect the judging.
Thanks to the Forum, I did the Corn Starch trick and refrigerated them for a few hours uncovered, then seasoned them with Meat Church Deez Nuts liberally.  They sat in the fridge seasoned for another hour or so, then put on the LBGE at 250degrees PS legs up with a drip pan, and raised grill for 2 hours, I used 2 Pecan chunks and 1 Cherry Chunk.  The last 15 mins of the cook, I pulled them off and put them in a SS bowl with melted Butter, reseasoned them with more Deez Nuts, and raised the temp of the egg to 450degrees and put the wings back on for a final sear.  They were only on at that temperature for 5 mins or so, didn't want to burn them.
Pulled them off and used a sprinkle of seasoning salt to finish, wow were they good!  Best I have done to date.  They were not overly smokey, but really delicate tasting, and the meat fell off the bone in your mouth.  I timed it just right also, the judging was at 4:30pm, plated everything at 4:25pm and ran across the street with the wings for the judging... Sorry no plated photos, really had to run and make it on time, wanted to serve them right off the grill as everyone knows that is when wings taste the best!  There was 14 participants this year, mine were gone in 5 mins...   
I was pretty Happy!

    wow!  have to try this - I have really not done good wings yet.  What is this rub and where can I get it?  also the corn starch trick.  did you put the corn starch in a bag and toss wings in there and shake it up?

    Meat Church is the Company, check your local BBQ shops and Suppliers, or purchase online directly from them.  I used a sieve with the corn starch, just sprinkled it on them, a bag would do also I guess, but I didn't want to put too much on.

    You are right, I only really got to eat 3 when I was tasting for doneness and flavour, I should do a batch in a few weeks, tried a lot of wings yesterday, almost winged out!  But not quite : )

    Awesome! I try to let my wings dry out in fridge on a cooling rack, uncovered, for a few hours first, then use cornstarch/rub just before cook.  I see you seasoned early . . I will try this next time.  

    I used to always go raised direct . . but recently I have been doing my wings indirect, with final higher temp sear.  Always give skin a nice crisp crunch . . without deep fry!

    Thanks!  Actually there are other smokers in my hood, two Bradley electric, two Komodo type, and a few Weber kettle Grills. Plus one guy with a XLBGE and a really sweet The Good One smoker, he is a professional Chef.  (he is not in the competitions)  Even though I have tried his ribs, very disappointed really!  I think pulled pork may be too easy with this group??  Any other ideas are welcome!  I have until the end of July to decide.

    If you want to be unfriendly then choose Brisket. Most won't pony up with the cost of a whole packer. If you want plenty of participation, and a technical cook I would pick seafood. Most people will overcook. I might try Seared Tuna, or Bouillabaisse. Find out what has been the items before you entered. Chile Cook offs are popular. Something that is very hard to do is Chicken Breast and not expensive.

    An experienced gas griller would be up to the challenge of making pulled pork on their grill. It's not really difficult to do unless the weather turns cold and windy which then makes it a bit of a pain to try and keep steady temps (tho there are ways to deal with that).

    I didn't know outdoor cooking was so big in Toronto.  None of my neighbors cook outdoors regularly - not even on a gasser.

    That's awesome!   Nice that a solid slow cooked wing took the competition over I'm sure plenty of standard buffalo style wings (not that there is anything wrong with those!)

    Sooooo....the BIG question, Mr. Champion, is what are you going to choose for next year's comp? 
    I'd go pork BBQ. You'll get plenty of people serving their crock pot pork abominations or slow cooked oven varieties and then BAM! you come out with an egg masterpiece.  :money:
