Had some pork belly and ribs that are at the eat or throw out point. Started with pork belly diced and red onions then added ribs I chopped. Then added a couple scoops of ole medium queso and got it really hot and poured into a plate and covered with red onions, Mexican cheese, and Mexican cream. I'm drunk and these were good.

I've been running around getting ready for tomorrows Labor Day weekend party. Got all the cookers loaded and ready, will have the XL, Small, and Hasty Bake going. Here's the firebox for the HB loaded and ready to go. This will be used for chicken thighs for pulled chicken and probably the mac n' cheese.
Also headed out and picked up some supplies. The cupholders in the 2014 Silverados are way too small.
Got this thing out of the fridge that has been thawing all week.
Trimmed it a bit and then got it ready.
It's back in the fridge now and waiting having a few beers until it's time to start the XL.They/Them

Just put on for a low and slow over-night.
First time doing boneless butts. Costco doesn't sell bone-in. These boneless butts needed to be tied. I tied them together. Real pain in a$$.
14.5 lbs...I'm thinking 14 or so hours.

@TigerTony I always do Costco butts and never tie. The small flap finishes a little early so it's always a cook's treat.

Went to the Farmer's Market this morning in Ogden (which I do every summer Saturday) but took oddball photos with my new Nikon Df and 85 f1.4 instead of buying (actually I went back to buy more peaches and 'maters before driving off). I wanted to try out Photobucket's "slideshow" feature; the first three photos got mistakenly included and I can't edit them out, so ignore them.

Labor Day weekend party is over, everyone has gone. I didn't "fall asleep" on the couch like last year so I consider it a success.
Now sittting by the fire.
Oh, and the brisket I smoked, my best ever. I'll lost a recap tomorrow, for now cheers everyone and I'm working on filling the recycling bin.
