This is something that I wanted to ask you and other Blackstone owners about. Other than shear capacity, what are its advantages over a cast iron pan? Does it produce a better quality end product? Just curious. I was thinking the same. I will say the space and not smelling up the house are definite pluses. I was looking at the Little Griddle and Griddle Master too that would go on my gasser. Nice part, mine is natural gas so no propane tanks. Also, the Little Griddle is stainless and I'm thinking that smooth stainless surface would be better. I'm still happy with the Blackstone...fajitas tonight so will be interesting since we normall simmer in a cast iron pan which I obviously can't do on the griddle. I have made them numerous times. I put the chicken on half with the heat high and the peppers and onions on the other side around medium/low. After that starts to cook for a while I add garlic, mushrooms and tomato to the veggies and combine the meat and all those veggies and cook it into a sloppy delicious mess. @AlbertaEgger , I'm sure I'm missing something in this 9 page thread, but doesn't bed bath, and beyond Canada ship to you? It has a very sharp edge to it. Will use it for both for now. I know. They supply usually as bulk to major companies. But they have a small show room where you can go purchase single items. Other than that, it's hard to find griddle tools here. I was impressed for sure. They are a pretty good restaurant quality.cazzy said:

Tonight was BLT between grilled cheese. Kind of hard to make out in the pic...white cheddar on top. Basically 2 grilled cheese sammies with bacon, lettuce, mater in the middle. My wife's idea. @DMW, fried rice is comparable, I think its more fun to cook fried rice Teppanyaki style. Prefer to stir fry on the wok, messier to make sauce/gravy on the griddle.

I'm in the middle of ordering a trailer smoker from the same builder as Unit 6 (unit 7 is his HUGE 500 gallon smoker I'm pretty sure) and really considered something like this. But ended up going with something much more versatile. I added a ramp/storage area that is 40"x72" Big enough to wheel it on without one of the side tables, (the other will just extend over the railing.) OR big enough to put a Pitmaker Vault. OR 2 XL eggs in nests. Or whatever crazy cooking gadget I can come up with that fits the event. Almost identical to this trailer they built from someone else.Hotch said:

Yes, love those Shirley welds! I'm looking at their new design that is completely squared off on top. So you can get 3 racks of equal dimensions. So I'll end up with 3 30x65" racks spaced 6.5" apart (actual clearance between racks.) It gives so much space and isn't nearly as much $$ as going longer.
