WELL first off a special thanks to @NPHuskerFL I called him up late last night as I was having a Stoker issue.  We talked it over and he figured the problem was in the way the probes and fans were assigned.  I reassigned them and I was back to work.  The plan was to get the brisket on at about 530PM and it didn't end up going on until 830PM.  I'm not to worried she just needs to be finished around 11AM packed up and walked down to the beach.  Happy Memorial Day to everyone. 

I had to be creative with the set up as the brisket was a bit long

Set Up - Rockwood charcoal, Peach and Red Oak chunks, oval pizza stone, rib rack, S & P for the brisket

Currently she is sitting at 175 wrapped and in a stall.  Now its time for some cold ones to start flowing again.
