Roast on the Egg

Bought a 7 lb roast at Costco and decided to do a try it out on the egg. It was boneless. I'll let the pics do most of the talking:

First off, I got my inspiration from @BigGreenCraig with his post: http://eggheadforum.com/discussion/1164810/easters-prime-rib-cook-pic-heavy/p1- Stabilized Egg to 250F indirect with platesetter legs up
- Placed a small grid on the actual platesetter to make a small gap between it and the cast iron pan holding the veggies
- Placed the standard grid on the legs of the platesetter and the roast on a roasting rack (roasting rack probably not needed)
- Cooked until I got to an Internal Temp of 130F
- Unlike @BigGreenCraig I didn't have much of a crust at 130F, so I did a unexpected reverse sear. Since I had taken the roast out at 130F, I was concerned the sear portion would raise far beyond 130F so I got the egg to as high temp I could get and threw the sucker right on the flames.
- Searing was at most 1-2 minutes.
- Let it rest for 10 mins (I have a hard time being patient with the resting period
)

Looks fantastic. How do those sweet peppers from Costco turn out compared to bells? I've always eaten those fresh, never cooked with them but it's a great idea.
