Thanks guys. I am going to go with the table nests and a piece of steel underneath the nest just as an added security measure.

@johnkitchens, I have mine sitting on a piece of granite.  I have felt the granite on cooks to see if it is hot, but it has never felt hot.  I am beginning to wonder now though.

    image
Granite is not a good conductor of heat, so the heat won't spread out much.  What you can't tell is how hot the granite is in the center under your Egg.  With the heat not spreading out, the egg & the granite can get quite hot where there is no air flow to cool it.  That's how those scorch marks form where people set their egg on top of the paver.  I would highly recommend either the Table Nest as shown above or the 3 feet be added to your set-up.
I meant to get a table nest, but like with many things, I haven't got around to it.  Need to do that before something happens.

I just got off the phone with my table guy. He is coming back over to the house this afternoon to measure again. I want a 7 ft long table, but my wife thanks that is too long and will take up too much room, yadda, yadda, yadda.

She can kill me in my sleep so I listen to her every now and again. So here is my next question. I am thinking about a 6' 6" table. My table guy wants to put each egg 6" from the outer edge. This would leave me about 22" inch of work space in between each egg.

I think I had rather have the eggs closer together in the middle of the table and have more space towards the outside of the table.

Can I put the eggs as close as 6" to 8" together?  If I went with them 8" apart I would have 13" of workspace (pan placement, etc) on the outside edge of the table.

I am also having him build another storage / TV table for me. It will also be built out of cedar. Both tables will match. This table is supposed to be 6 ft long.

It will have 4 drawers that are 24" wide x 20" deep x 12" high. It will be flat on the top for prep etc.

I am going to have a 12" wide hidden compartment in the back of the cabinet running the entire length of the cabinet. I say hidden because it isn't going to be very visible. I will have hinges at the back on the top so I can lift up the lid of the compartment.

This is where my tv will live when I am not using it. I want it to be kept out of the dust, pollen, blowing rain etc.

My plan is to lift the latch, remove the tv, lower the latch and place the tv on top of the cabinet and enjoy my day.

    This is my current setup.

The storage cabinet will replace the charcoal grill that is being used for storage now, and the new table will go where my eggs are at now.

Any advice on my 6" to 8" spacing plan?

@nolaegghead so putting two larges as close as 6" together shouldn't cause a problem? I can't think of one, but I don't want to overlook the obvious.

Only thing I can think of is if you had a rotisserie setup.

I'm thinking 13" is awfully small work space.

I would prefer that 22" in the middle or all on one side.

I say board up that window and make a U shaped outdoor kitchen. In all seriousness I'd probably put the table between the two pillars so as I was cooking I'd be looking out to the yard. Also gets the smoke out from underneath. Can you add a folding shelf off the one end of the egg? 13 " workspace is two small IMO I say go pillar to pillar

Okay I just finalized the deal with bridezilla and my table guy. My egg table is going to be 6' 6". I am putting each egg 4 inches from the sides leaving me 27 inches of work space in the middle.

For my storage / TV table it is 6 ft wide and will have four drawers that are 24" x 20" x 12". This will give me a 12" opening in the middle from top to bottom with a shelf in the middle.

I can roll them together if I have too. I am going to run an ethernet cable out there for internet for streaming, and I am going to run electricity in the tables so I can have plug ins where I want them.

I just ordered the table nests from Amazon, and I will get my steel cut. I am super excited about getting this. My cousin is the builder, and he promises me I will love them. I hope so since it is costing a lot of $$$$$$$!

@grege345 If I even mentioned blocking that window I would be dead by morning. Mama don't play.

I think I will have enough. For the past two years I have survived with 13 1/2" of prep area on my little table and that is for both eggs. I think the 27" in the middle will be enough.

If it isn't I will have 6 feet of flat prep space right beside it on my other table. I can have them touching if I want to.

    I can't wait until I get them.

13" vs 22" for prep is huge. What did you decide? If you're happy and MaMa is happy that's what counts. :D

@NPHuskerFL I decided to go with a 78 inch table with the eggs 4 inches from each edge. This will give me 27 inches of prep in the center.

If things get really crazy on both eggs, and I need more space I can use all of the 27 inches for the left egg and the 6 feet on the other table that I can make touch if I have to for the right egg.

I am hopeful it will work. Bridezilla's happiness is a concern, but like I told her the only three places I can get away from her are work, the golf course, and when I egg. I want a nice place for egging.

Don't forget swag for your table. I'll be putting hooks on this weekend, and one will hold this:

John...my eggs sit on stands that I designed before BGE came out with theirs. I have a similar clearance...if not more than what the BGE ones have and mine are made of thick steel. I have darkening under my large so I suggest putting something under your table nest.

    John,

I typically don't like saying what I think, because this isn't going to mine, it is yours, however,
I like the idea of having all your space in the middle.  I am just thinking of workflow really.  Your prep and items are in that central location and not on one side or another.  Not trying to sway you, but just thinking about functionality.  Plus, it appears that you gain more room by having them on the sides.

Either way I feel you'll be happy and it will be very nice.

@tarheelmatt I appreciate any and all input. I tend to over analyze decisions like this because I am going to have to live with the outcome for a long time.

I decided to put the eggs 4 inches from the side of edges of the table. That will leave me 27 inches of workspace in between the eggs.

After looking at everything last night and trying to picture different scenarios I think it makes more sense to have 27 inches in the center than 13 1/2 inches on each side.

I wish I had the tables now!

This is just a thought I had if I ever build a table for 2 larges. I want both in the table but one on the nest so I can roll it out for transport. The table could be built so the egg appears to be built in.

Agree on having the larger work area/landing zone. You need a safe place to set things such as a grid with food on it, plate setter, drip pans, or pizza stones.

I don't ever plan on moving them. I will still have the nest so I guess if I ever really needed to move it I could take it out of the table, but I know that would be a huge pain.

My builder just sent me rough sketches I haven't been this excited about buying something since I bought my egg!
