As part of the design, you could leave a spot for flip up extensions.  Don't add them now, but don't design the table so that they can't be added.  Then if you come up short on prep area, you could add at a later date.

That's exactly what I did and it works great!

Thanks. BTW a pair of those flush folding shelf brackets are rated at 130 pounds so while you can't chin yourself on them, but you can feel fairly safe they won't collapse on you! On top of that they lock in place so no fear of an accidental knock down either.
