Brisket on Large Egg?

Hey eggheads, I've admired from afar the eggs for years, and have finally convinced my wife to let me buy one. I think I want the large, but I've looked at it several times and I just can't picture a 12 lb packer fitting on it. I'm from Texas, so a smoker that can't handle brisket just won't work. Can anyone confirm that a good sized brisket will fit on the large (pics would be a bonus), or should I plan on geting an XL? Thanks!

    Welcome to the group.

    A 12 lb should be no problem. Here is a recent cook I did with a 17 lb. I did separate the point from the flat but it was so I could pull each as they were done rather than overcooking the point as the flat finishes. It did get a little shorter when I separated them but it was almost 18 lbs. Also, there was no bending or adding a brick under the middle.

    A 15# packer will fit. It's a little tight for the first few hours. Sometimes I lay foil under the flat end for the first few hours until it shrinks up.

    XL would probably be better, but how often do you cook a brisket? L would be better for other cooks, assuming you're just feeding your family 80% of the time.
  • Thanks for the responses! I do brisket around once a month, it's my most common bbq cook. The XL is tempting, but I have a small porch so the Large would be ideal.

    I love the large BGE. If you need to cook more, you can always get the Adjustable Rig from the Ceramic Grill Store. I think you can have up to 3 levels with it.

    That being said, I have a large and if you're only doing one brisket at a time it's perfect.

    I have done an 18# packer w/ no issue on our large. And have done two 10+# flats at the same time. If it's too long a brick wrapped in foil or rib rack etc will work fine until the protein shrinks some.

    I've done 16-18 pound briskets on my large as well, it can be done!

    I too debated the Large over the XL and went with the XL, because it was replacing my old gas grill and I wanted something that could handle 20 or more burgers, 8 or 10 large steaks or more. Now I have a large patio and have the room for it, but I don't think it takes up that much room. Now with the AR you should be able to do two 14 lb briskets easy. On my XL I've done a 16 lb brisket and 2 pork butts with a toral weight of 19 lbs.

    I've done a 15 lb packer on my L. The Adjustable Rig gives you a lot flexibility. I chose to add eggs rather than go larger so I could do a variety of cooks at the same time. Different temps, different smoke, etc. Just do whatever fits your cooking style would be my advice.

    Dude, I do 12 lb'ers on my medium egg, it only has 15" diam grill surface.
