It's Stretchy Pants Time


Gathering some fruit for the zest and juice to add into the gravy, cranberry sauce and topping for the herb butter rub on the turkey.


400℉ raised direct. Herbal butter with 2 sticks of unsalted butter, sage, thyme, rosemary, lemon zest and juice, kosher salt and cracked pepper for rub.


Gravy.
CI pan at 275℉. Giblets, neck, back of spatchcock turkey, one scoop of herbal butter described earlier, 1/4C water, 1/4C white wine. Cooked down till all was fall apart tender. Strained multiple times. Added in some of the turkey juices after the rest and just a little natural chicken stock. Flour to thicken.


The rest of the meal was homemade by HuskerMaMa and our Son.
Cranberries. Fresh cranberries, sugar, stevia, Grand Marnier, orange zest (one of my favorites).

Sweet Potato Casserole with Pecans and mini marshmallow topped (also one of my favorites).

Green Beans w/ bacon.

Southern Mashed Potatoes.

Deviled Eggs.

Stuffing and rolls & biscuits.

On the table and plated.
