It's Stretchy Pants Time

Beginning.

Gathering some fruit for the zest and juice to add into the gravy, cranberry sauce and topping for the herb butter rub on the turkey.

400℉ raised direct. Herbal butter with 2 sticks of unsalted butter, sage, thyme, rosemary, lemon zest and juice, kosher salt and cracked pepper for rub.

Gravy.
CI pan at 275℉. Giblets, neck, back of spatchcock turkey, one scoop of herbal butter described earlier, 1/4C water, 1/4C white wine. Cooked down till all was fall apart tender. Strained multiple times. Added in some of the turkey juices after the rest and just a little natural chicken stock. Flour to thicken.

Cranberries. Fresh cranberries, sugar, stevia, Grand Marnier, orange zest (one of my favorites).
