I thought why not. Meat, cheese and potatoes. Simple but awesome. Thought I would put a little smoke to it as well. Hence the use of Unit #1 for the finish.

Unit 7 tuning is complete. Also final deflector plate installation on a direct fired hog cooker I built is complete as well. They will be blasted and painted and ready for use in a few days. I'm going to post first firing of each my friend. If I don't post it here, it will be on the BBQ Brethern for sure. I will certainly give yall a heads up my friend.

Had leftovers for lunch and again for dinner tonight. No complaints here. She even topped it Oakridge habanero Death Dust. (No picture this time around but have this one from last time around)

For the most part a 50/50 mix of cheddar and mozzarella. I also lightly sprinkle with fine parmesan. Awesome combination.

If you like Parmesan, this is about as good as I have ever tried. I even use this one for chargrilled oysters. Restaraunt Depot carries it if you have one close. image

@Photo Egg- It's well worth it my friend. Brother Nola and his wife are the ones who turned me on to it. It's all I use now.

@Griffin needs to see this.  Looking good!

I was at a bar the other night and you could get any of their nachos served with tater tots instead of chips.  They called them tot-chos.  I didn't get a chance to try them but plan to make them sometime soon...

Which came first the chicken or the egg?  I egged the chicken and then I ate his leg.

Quantity is every bit as important as quality in my book. If I'm starving, I actually err on the side of quantity over quality. Can't help it, I'm a glutton ;)
