8 butts, 2 eggs, 2 different setups. Pulled Pork for 200...
Here are both eggs chugging along with 40 lbs of shoulder in each. One with adjustable rig with the oval stone laid directly across the fire ring and one on a grid extender from the group buy last year. Both are rock solid and cool in their own way. Glad I have both
. Duck and venison chuckies tomorrow.
Janell made 400 yeast waffles, 5 gallons of tomato basil soup, shiner bock bbq sauce, and a ton of other stuff today. She is cranky

I did put 2 butts on the lower grid and 2 on the upper in each setup. Had to move them around a little this morning to firm up the bark on one of the butts that was touching the dome. Other than that, 80 lbs of pig and a good noght's sleep with no issues at all.Keepin' It Weird in The ATX FBTX -

A few more quick notes in the cook:
The Adjustable Rig kicked the crap out of the grid extender. All the butts were perfect and had perfect bark all the way around. The grid extender sagged under the weight of the butts and sort of rested on the butts below. The bark wasn't fully formed on parts of all 4 butts on the extender. I have moved them around to firm it up and I'm sure they will be fine but I lost some bark and some meat getting them situated. The AR is definitely the way to go on a cook like this.
I found Lazzerri lump at RD for .32 per lb. I think I got ripped off
). It was basically a 40lb bag of half carbonized 3 foot logs with about 3 lbs of shake in the bottom of it. It actually performed really well once I got it going but I won't be running back to this lump any time soon. Pretty rough stuff.
