A Hung Chicken.

Nothing special today. Just a 6 pound bird rubbed with salt, pepper, parsley, onion and cayenne. Going to cook indirect at 375 degrees hanging on a meat hook in the vertical cabinet of Unit #6.

    Lump- OO.
    Wood- Oak & Pecan.
    Smoker- Unit 6. Reverse flow off set.
    Rub- Salt, pepper, cayenne, parsley and onion.
    Set up- Indirect & hung. (Meat Hook)
    Temp- 375 degrees from take off to touch down.

    Location- Just "this side" of Biloxi, Ms.

    Status- Standing by.

    I think unit #6 sees more action than Peter North! I bet that's gonna be a good yard bird.

    Do you even use your egg anymore? Isn't it a lot of work for just one chicken in that big smoker. She looks lonely. I've been looking at reverse flow smokers, but to rich for my blood.

    Yes sir I do. I cooked a ham yesterday on my egg. This is just a warm up. Later tonight I will load Unit 6 up with meat.

    You are 100% correct. The skin that it produces cannot be matched by any other method except possibly deep frying whole. I love to hang chicken. I really wish that more people would try it. The resulting skin is the very same all the way around due to not touching a grid.

    I mentioned before why I like this technique and the skin is the reason...a huge benefactor from hanging. 360 degrees of goodness!!

    Just curious, but how does hanging give that much difference of a result than using one of the wire poultry sitters?

    That's why I ask about the wire racks. My brain is a turning. In my head you could hook it and have a small chain off the hook with a metal dowel rod through the top of the chain that would span your dfmt or open chimney hole. You would want the chain long enough that you would be able to remove the rod and lower the chicken to the grid. Rigging at its best.

    When you stand one on a wire holder the chicken touches the grid. Hanging it on a hook there is no metal contact at all. I prefer to hang them by a wide margin. To each their own as it were.

    How about using a rottiserie?
    Large BGE in a Sole' Gourmet Table
    Using the Black Cast Iron grill, Plate Setter,
     and a BBQ Guru temp controller.

    Medium BGE in custom modified off-road nest.
    Black Cast Iron grill, Plate Setter, and a Party-Q temp controller.

    Location: somewhere West of the Mason-Dixon Line

    Using a rotisserie gives great results as well. If done truly indirect it will equal the hook. But if done in the traditional set up of the fire set back and one side exposed to raised direct flame then you can tell the difference. Plus a rotisserie is a pain to deal with and expensive and requires electricity. A metal hook is free and requires no power. All things considered the hook wins hands down. Give it a try and see what you think.

    Hung chickens also self baste. Having the legs at the bottom closer to the heat source will also protect the breasts. Ultimately the skin just ends of more crispy than other methods.

    @SGH try this for your chicken to get even better results. Get a hook, tie some twine to it, then tie it to a 2nd hook that's probed into the chicken. If that doesn't work, what I'm looking for you accomplish is to get the chicken to slowly spin. The settle rotation will really help it cook evenly. Food for thought.

    Yep me too. Some SS links, SS rod and SS meat hook. Running 350℉ or above ya could have it open. Could probably finagle something to work with the Smokeware or DFMT for a L&S.

    I actually do that very thing most of the time. I have a very, very tiny ss chain that I use for that very purpose. I'm kind of in a rush this evening so I didn't rig it up. Got a lot of meat I'm prepping while the chicken cooks. I will show a pic of my hooks on the chain in a bit. But you are correct in your analogy for sure.
