I always like a chop. I have a set of grill grates that I started using again, kind of forgot about them. They do a nice job of marking the chops! I tried them down real low in the firebox with a steak but the sear marks were too dark, tasted a bit burned If you want a real treat brine a thick chop, into the sous vide at 140 for 6 hours and then a quick sear on the egg!In the bush just East of Cambridge,Ontario

Me personally, I prefer this kind of cook over all the stuffed this and that cooks. Nothing wrong with them I just rather taste each componet of the meal on its own without being all mixed up. Eggselent job!
