Finally nailed the brisket!

13 hours at 250 dome and FTC for 2 hours.
Salt and pepper rub, no injection.
Next time I will trim of a little more of the fat cap.

Thanks, next I want to seperate the point and make burnt ends while the flat is FTC. I reheated the leftovers in a foil pan with some beef broth and chopped them for sandwiches. They were great. -
