    Get back to Texas. All Central Markets go nuts at a Hatch time with stuff. Hatch meatloaf and hatch sausage from there last year. Photobucket Pictures, Images and Photos
    Salado TX & 30A  FL: Egg Family: 3 Large and a very well used Mini, added a Mini Max when they came out (I'm good for now). Just given another Mini to add to the herd.

    My son has a friend who just moved to Colorado.  Had 20 packages of Hatch peppers in the freezer, could not take them with, my son now has them, wants to share.  What do I do with them?

    @henapple‌ This is one of many things my lovely bride misses about Taos, NM & Pueblo/Denver, CO. Fresh Hatch NM Chile's are awesome!

    Or you can grow them on your own like we do out here in Georgia! We used the seeds from the chiles we brought back home from Albuquerque last year to grow our own. I've already roasted over a dozen on the egg with plenty more coming off the plant.

    We love to introduce the Georgia natives to hatch green chiles!

    Assuming they've already been roasted and still have the charred skins on them, take them out of the freezer and thaw them out. Use gloves and remove the outer charred skin. Cut the stem off and then put the chile on top of whatever it is you are eating. More than likely they will be pretty hot, so give them a small taste test first to judge how much heat you can take at a time. There are plenty of recipes online showing you all the different ways you can enjoy them.

    Once the chiles have been thawed and peeled, store them in the fridge up to 2 weeks. Usually you only thaw what you'd eat in that time period so they don't go bad. Enjoy!

    Think you are correct @Griffin - kinda like champagne can only come from the Champagne region of France, the same stuff from anywhere is else is just a sparkling white wine.
