Hi
This has been done before but I thought I would give it a try. Deboned the thighs, made a stuffing with mushrooms, bacon, onions, parsley, mozzarella and white wine. About 450 indirect until 180 with the thermopen. I seasoned them with Jamaican firewalk and basted with butter. Served with fresh local corn, roasted red peppers and broccoli. Nice pino Grigio and I'm happy!
