So...I bought a whole boneless vac-packed rib at Costco three weeks ago and just threw it in the fridge. Cut it into 1 3/4in steaks today. Rubbed with Mickey's coffee rub and cooked at 275* dome indirect until 108* internal. Pulled and got the Egg to 700* and seared 1 1/2 min per side. They ended up at at 123-125*. They were without a doubt, my best steaks so far......
