Well, decided for cook number 3, I would try my hand with spatchcock chicken. Bought two birds, dried them, added a little olive oil and rubbed one with jerk seasoning and the other with seasoned salt. Came up with a homemade way to raise the grid, got the egg to around 375 and added a little cherry and apple wood for the smoke. Put the birds on around 5:30 and some corn on about 20 minutes later.
About 40 minutes into the cook they were smelling really good, so good I had visitor looking for some chicken
[-X Let him go on his way and turned the corn. Right at the 1 hour mark I checked the temp with my Thermopen and the breasts were @ 165 and the thighs were @ 187. Pulled them and let them rest 5 minutes. This is the only way to cook chicken! Chicken is my wife's favorite meat and always orders it when eat out. She said this was the best most moist chicken she has even eaten!! I didn't really care for the spices I used but the chicken was really good. I would like some suggestions for a better rub on future cooks. It looks like I will be cooking this quite a bit in the future - my wife asked if I could start cooking several chickens on the weekends to eat throughout the week.
I made a stainless steel cone holder Friday, so after we finished the chicken, I made some smore's in sugar cones from the recipe I found here. Another hit! I'm loving the Egg and can't wait to finish it's new home. Hopefully, sometime this week.

. Looking @ the pictures online, the holes did look like they were to small, so I made the rack with 1-3/8" holes and 4" tall, so they would sit upright. Work perfectly! XL & Mini-Max

Rubs are usually a personal preference. Some people mix rubs or make their own. My favorites are Dizzy Pig, John Henry, Butt Rub, Tatonka Dust and Bodacious Rub. Do a search for rubs and you'll get a lot of results. A basic rub is usually 1 part salt, pepper and paprika and then add 1/4 - 1/2 part of your favorite spices like lemon pepper, chile powder, red pepper, onion powder, garlic salt, etc. Mickey posted a good coffee rub recently.
Any road will take you there if you don't know where you're going.

Thanks. I'm looking for recommendations, as I search for my favorite. So far, in my limited experimentations, I like the Famous Dave's rub the best. I totally forgot about the Mickey's coffee rub. I'm not a fan of snakes either, but I've been told the grey rat snake is good for keeping mice and bad snakes away. As long as I see them first and not right by my feet :-O, I'm ok! XL & Mini-Max

Looks awesome and you got it down already. For rubs, we also like the Dizzy Pig rubs. A wide variety of flavors but they are really good. Much lighter in the salt than a lot of the rubs out there.Clarendon Hills, IL

How long/temp do you put the cones on for?Mini Max, Medium BGE, Large BGE, Lodge Cast Iron Sportsman, Digi Q II, Woo 2, AR with Oval setup

I believe the temp was still around 375, raised grid, direct (set up from the spatch chickens) approximately 8-10 minutes. Since this was my first time and wasn't exactly sure how long, I just looked through the daisy wheel until the marshmallows started to brown.
