Class and work done...
Doing chicken kabobs for the ladies, and a prime dry aged 10oz filet for myself... Sides will be asparagus and potatoes.
Looking forward to having some good (egged) food tonight.
Just got my new lenses for my glasses. Big change... When I take them off my vision is doubled for a few seconds. My new scrip had a prism of 1/2, the new ones are a prism of 4

Did u have the fire ring out to bring the meat closer to the coals?
Also, direct all the way? Reverse sear? Temp?

Direct all the way... Just filled the lump up above the bottom of the fire ring. Did the chicken till it was 160 IT and the filet till it was about 128IT. Nice cook. I do that too, adjust the height between the burning lump and food by adjusting the amount of lump I load. Of course you can also adjust the grate height. There are many variables, cooking with fire.

Never thought about adjusting lump as a tool for establishing distance between food and lump. Learn a thing or two everyday.Steven
