I have a deep strainer with a vertical handle on it. It fits neatly in a deep two quart pot. When the water comes to a boil, in the pot,l I place the strainer (with the bok) into the boiling water. The leafy leaves remain above the boiling water for 8-10 minutes while the thicker base cooks...then I push the leafy greens into the boiling water for one or two minutes. Drain and serve. It is still a misnomer. It is a variety of Rockfish on the west coast. True Red Snapper is only found in the Gulf of Mexico and up the East Coast.Either way, great cook.
