I have a deep strainer with a vertical handle on it. It fits neatly in a deep two quart pot. When the water comes to a boil, in the pot,l I place the strainer (with the bok) into the boiling water. The leafy leaves remain above the boiling water for 8-10 minutes while the thicker base cooks...then I push the leafy greens into the boiling water for one or two minutes. Drain and serve.  Thanks for your positive comment.

It is still a misnomer. It is a variety of Rockfish on the west coast. True Red Snapper is only found in the Gulf of Mexico and up the East Coast.

Either way, great cook.

You can also stir-fry or use it in a stir-fry with other vegetables. Best if you separate the tender tops from the base as they cook much faster. Add them in the final minute, or so, of your cook.

Pacific Red Snapper is not a real fish. It is a marketing tactic in order to sell less desirable fish. Most likely a very tasty fish but it aint called a red snapper in any science book.
