Turbo Butts--Mickey is a Genius

Mickey is a legend!!! On Friday am, I did two turbo butts. Totaled about 17 lbs. Started at about 5:20 am, removed to the towels at about 9:40 and left in the cooler until 4:30 for the first and 6:00 for the second. Perfect!! Very tender and falls apart. The second one, I was holding in one hand while unwrapping the foil, the far end of the butt fell off into the pan. Talk about tender. Now I need to try the turbo ribs.

Turbo cooked butts are great and very consistent in cooking times.

I have a butt going on now. I still have yet to try the turbo since I enjoy the low and slow. Kids are sick tonight so I'll be up anyways. And on the off chance they sleep the maverick will keep an eye on things.Dunedin, FL

I have now done low and slow and turbo.. The butts were both delicious.. Low and slow seems to provide better bark but turbo was much jucier . There is no right or wrong .. Yummmmmm either way

I am a turbo convert, though when I can, I do the first hour at around 225 thinking I get more smoke penetration. It probably does not make a difference though. There are a lot of good reasons to go to Salado. Seeing Mickey's head - no matter how large - isn't one of them.

His brains were never in question. It's simply a matter of what your time table is... Got the time? Go low n slow and enjoy the ride. In a hurry? Go turbo and be happy...

TURBO BUTTS. · Hot'n fast, 350 for 5 hours to internal to 200 and then let it rest for an hour or so wrapped in towels in a ice chest. Falls apart and oh so good! Have fun! · Be sure you only get a 7lb butt or so for the time (or a couple or more for more protein ) . Note: The butt box is not required. I use mustard & Bad Byron's Butt Rub (both not required).
