300 (Half) Chickens At A Time (with pics)

This past weekend I hleped my church cook a bunch of chickens.  We fit a little over 300 chicken halfs at a time.  I manned the 2:30am - 6:30am cook where we got the first started and the first 300 halfs cooke...it was quite impressive.

    It is a pit that some men from our church built a couple years before my wife and I started going there.  They do this every year.  This was my first year being involved.  It was a BLAST!

    Hey, wow.  Actually every year ( twice ) I go to a horse event in New York state along with +/- 50-100 others.  The local town has a pit just like that, and the chicken and fish cooked on that thing are absolutely great.  Too big for my house tho.

    FUN! It appears that some people love their chicken raised, direct at 300F and don't like eatin' alone. Use a barrel of rub? What about the long tongs? You could spatchcock a horse (j.k.!) on those grids!

    That is a ton of half-cocked chicken!  Did you have to flip them all at some point? 



    Which came first the chicken or the egg?  I egged the chicken and then I ate his leg.

    How (and how long does it take) to get that wood going and then spread out the entire length of the pit? It must get pretty warm standing nearby.

    Well, "spa-Peggy" is kind of like spaghetti. I'm not sure what Peggy does different, if anything. But it's the one dish she's kind of made her own.

    No rubs.  We mopped the chickens as they cooked (just like you would do with a hog) in a vinger, oil, spices concoction.  We used spatulas actually.  The chicken stuck to the grates so the spatulas allowed us to get underneath the chicken without tearing off much meat.   
    We basically started with 8 mini campfires that we built up and spread out until the pit was completed covered.  It took about an hour and a half to get it ready to put the chickens on (a lot quicker than I would have expected).  It was super hot and super smokey.  The only thing they need to change is some up drafts in the ceilings to pull the smoke out.  That is on the to do list before next year.

    The grates were designed so they could be flipped by putting one on top of the other.  You would have to see it up close to understand but it was very well thought out.

    I would suggest to any of you that if you have an opportunity to do something like this you should.  It was pretty AWESOME to watch and be a part of.

    Also don't expect to want to eat chicken anytime soon :))
