Sunday ribeye roast

So today we had our family gathering.
My brother was impressed by the BGE and we enjoyed a very pleasant sunday meal.
The usual grilled vegetables with the addition of these incredibly sweet red onions.

My brother never tried ribs on the BGE so I got up early and did an early morning cook.

After pulling the ribs I went on at 230 F approx with the ribeye roast. I decided for a whole cook.

It took 3 hours to reach 120F.

A final light sear at higher temp after removing the platesetter

And this is was is left of 3 kg of meat

    That looks like a great spread for a family gathering.  I'm guessing that everyone was suitably impressed with the quantity and quality of the food.  I have to say that I'm a little disappointed that your group had leftovers...

    Way to bring it home.  Great gathering and banquet right there.  Nailed that roast.  Congrats.
    Louisville; Rolling smoke in the neighbourhood.  Life is too short for light/lite beer!  Seems I'm livin in a transitional period. CHEETO (aka Agent Orange) makes Nixon look like a saint.

    Thanks, eveyone for the comments both to this and to the previuos pre-cook post.
    @dbCooper we call this particular type of onion "cipolla ramata di Milano". It's nice and sweet, great for grilling.
    My brother expressed his preference for a whole cook of the rybeye rather than doing just chunks or single steaks. Maybe next time. We appreciated the combination of the flavourful crust and the juicy interior, so doing chunks could be a winning approach as suggested.
    Last time I did finish in caveman style but I must say that I agree with @Foghorn's suggestion: you just risk getting flames and charring. A much lighter approach this time and it was better.
    @GrateEggspectations I did quit expanding the family a while ago, but I do take guests.

    Just for the record (no pics available!), mother did treat us with delicious oatmeal chocolate chip cookies and my brother was kind enough to offer a blueberry topped cheesecake from California Bakery, the best you can get in Milan imho.
    Bonus info for @Stormbringer: meal was accompanied by two bottles of Ronchedone Ca dei Frati 2022

    OK, we need to go over the house rules here in the forum of genius chefs. 

    When we serve meals like this you must invite the elders at all costs. We will just put this in the file for your end of year review. 

    Congrats on such a beautiful cook. I hope everyone stuffed themselves, because not sharing leftovers is a major strike that will also go into you file. 2 more and you are handling the bar tab when this group gathers in your town.

    Buf if you rush at the airport and take the first flight to Milan I'll be waiting for you to share a last ribeye sandwich!
