Turmeric Roasted Cauliflower Bowls with Whipped Feta

Had an entire head of cauliflower slowly marching towards its last rites, so I did a search to see what kind of meal I could build around it on a whim. I opted for a riff off of https://dishingouthealth.com/turmeric-roasted-cauliflower-bowls/. While I was missing quite a few of the ingredients, I thought of workable substitutions - to me, anyways - and added toasted pine nuts, some kidney beans and corn niblets. I omitted the arugula given I didn’t have any. Served on (Better Than Bouillon-infused) basmati rice rather than quinoa. Also used a few tricks to up the protein - chickpeas and some cottage cheese.

Did the prep on my lunch break and staged the cooked to the best of my abilities for ease of execution once the familial unit was present. 



The whipped feta (hidden at the bottom of the bowls in the composed dish) was nice and, as the author states, would be handy for secondary purposes. 



Got it plated and we were off to the table. 



Being a weeknight, I began the active cooking at around 5:30pm with a target serving time of 6pm. I think we were eating by 6:02pm. I think my pics held up the works. 🙃
