3 Briskets on XL

I was asked to provide brisket for a cousins graduation party that was yesterday. Started by finding 3 nice prime packers from Costco all around 10lbs. I decided to use just one egg and sacrifice some bark. Besides, I’m serving a bunch of drunk college kids. They don’t care. 

I went with the Woo/AR combo. Filled the egg full of Rockwood and 4-5 chunks of post oak. I cooked fat cap down with very little trimming done to the cap as I was really trying to protect that flat. Coated with the last of my Oakridge BBQ brisket rub and used the old trusty flameboss to drive the cook. I seem to have the best luck with brisket going lower than my normal for the egg. I did these at 225 and was expecting 16-18 hours. I left myself plenty for time if they went long and I could hold in the Cambro for several hours if they went short. They wound up taking 18-20 hours. Once they hit 160 I wrapped in butcher paper and finished in the oven. Everyone ate it and seemed to enjoy it. My brisket game is slowly improving.
