NOLA-style shrimp something…

Given recent calls for stand-alone threads, I figured this qualifies, as I put some thought into it. 

Had some wild caught Gulf shrimp in the freezer, and started looking up some recipes. Had a Bubba Gump moment… shrimp etouffe, shrimp creole, bbq shrimp, shrimp and grits…so decided on some amalgamation of all of ‘em :smile:

Stock, with  the roasted shells


Made some roux, added The Trinity ( I know… green bell peppers instead of red).

Dry brined the shrimp with kosher salt for a bit (ala Grace Young). Added chopped tomatoes, tomato paste, smoked paprika, DP Bayouish, Old Bay… and garlic. 


Served over parm grits. 

It ate well. caliprince approved, so it’ll happen again.
