Enchiladas that unite us…

Had been jonesing for enchiladas for quite some time, especially since @Legume posted his sweet potato and black bean rendition a awhile ago. Then there was this chorizo crema that someone posted, and its been haunting me.  Looked up a bunch of recipes, and got into it.

Rehydrated NM, ancho, cascavel, and pasilla chiles for the sauce.


Got stuff together for salsa. 


Arroz verde, with some of the roasted poblano thrown in.



The chorizo crema!

Fried up the tortillas.


Filled with ground beef, sweet potatoe, black beans, oaxaca cheese. 


Done!


Holy shite... they were so good :smile: I could eat the chorizo crema by the spoonful. In all the excitement, I forgot to serve the salsa, and the rice!

    Oh my. If I lived near you I would never go out for Mexican food.  I would just place an order for these once a week and stop by your house.

    Beautiful. Now, if I somehow inspired some part of that, I'm grateful for the nod and I certainly need to take your post as inspiration, the next level. I just don't remember it.

    One of my favorite tacos from a non traditional taco place nearby is black beans, sweet potato and house made chorizo.  Such a great combo and you've got it with your crema.

    I don't recall when you posted it, but it just stuck in my head. Hadn't considered sweet potato as a filling before.

    What a cook, documentation and incredible result.  You just keep bringing it at the highest level. Wow, just wow!

    I felt pretty dumb, when I found the rice under a sheet pan after dinner. Less cooking to be done during the week I guess!

    I didn’t cook them but I had enchiladas that were chicken and chorizo covered with queso and chimmichurri tonight. A Mexican restaurant that used to be low quality was taken over by new owners who have much better cooks.
