What’s on your rotation?

What’s on your quick weeknight rotation that you have at least once per week or 2? 

Here, we do lots of things with ground venison (sloppy joes, spaghetti and lasagna).  Kids always eat that up. And of course chicken nuggets and air fryer fries. 

On nights where we really don’t have anything thawed or planned, we put out deli meat, whatever cheese we have, some fruit and pickled stuff for a quick charcuterie board. And always have bagels in the fridge for pizza bagels (air fryer for 4 minutes at 375).

Tonight, a quick broccoli and cheese casserole with frozen broccoli, and air fryer chicken breast.

  • Tacos! Hamburger or whatever leftovers go in a tortilla. I try to make pizza at least every two weeks

    Because I live alone, instead of "rotations" I usually have "stints", where I eat the same dish for three or four days until it's gone or I'm sick of it (if I freeze extra portions I know, from experience, I'll never see it again until the next 2-day power outage).  
    My latest was spaghetti sauce, four days' worth.  I did vary it up a bit with a container of mushrooms, which I chopped up and fried in butter/EVOO, for the two middle meals, that was nice.  
    Prolly why I like stir-frying so much: a chunk of pork/chicken/beef, maybe 4 or 5 veggies, rice or noodles, and a myriad of spices or sauces, and I can make four different meals in a row, no repeats and no leftovers.

    Lately we’ve been having salmon at least once a week. There is usually a breakfast night of either waffles or pancakes. Hamburgers have been in the rotation as well.

    Normalcy is tough here with kiddos in activities. Travel soccer twice a week plus weekend tourneys and then my daughter in dance 3 nights a week. 

    We definitely limit fast food as often as possible. Lotta quick meals with rotisserie chicken and either roasted potatoes or a pasta of sorts and a salad/veggie. Kids eat it up and there’s usually no leftovers. Any chicken left I’ll turn into quesadillas for them as another night’s meal. Also tacos or sliders using ground venison or some of the ground beef from the 1/4 calf I get every year 
  • Your broccoli and cheese casserole looks great. Haven’t yet had breakfast and a bowl full of that goodness would hit the spot!

    As with @ColbyLang, we have a lot of activities for the kids here that leave us without any free time most weeknights. To complicate matters, the kids’ activities are sometimes staggered along with my wife’s work schedule. Tuesday nights, for example, I’m readying dinner in three different timeslots according to different family members’ timelines. 

    We’ve never had any meal that we make consistently every few weeks. We do have some standbys that we make every few months. Because of the schedule, I’ve liked making two or three meals on Sunday mornings to ready us for the week and beyond (though we’ve been skiing most Sundays throughout winter, which makes that less frequent). 

    Recently, I’ve taken to doubling or tripling every recipe and vac sealing portions for future use. Also often make extra for the in-laws. I’ve found this approach is working out really well.

    We do sheet pan suppers often. Misc veggies, asparagus, Brussels, mushrooms, onion, squash and whatever protein chicken, sausage, whatever all gets roasted together with evoo

    Increasingly: stir-fried rice.  Just too easy to bring together, and I pretty much have the seasoning and sauces dialed in.  So I’ll just vary the protein and mix of veggies based on what we have available.
