picked up some shoulders from Costco and they threw me for a loop, they have the bone removed already so they are floppy. Decided to keep’em packed a bit tight and will do them in some trays. Going to put them on the smoker tonight, then FTC them till time to pull for Sammy’s tomorrow.
Got the corn all cut up and ready for cooking tomorrow. Going to start kthe dates soon.
Also got a few boxes of brownie mix.

Just finished up about 75 goat cheese/w honey hog rub mixed in stuffed dates. They said plan for 50 samples.

Feel like I am going camping. They did say if I need anything just go in and get it from the store, let them know the sku, and they will just take it out of inventory.

@Ozzie_Isaac - way to step up and help your friend in a big way. Your menu sounds great. You will be the star of the show, never mind teaching some folks the versatility of the BGE (and Traeger..).

Awesome @Ozzie_Isaac !! FWIW, I do a lbit of boneless, They really take about the same time as bone in plus you get more seasoning, ( done both tied and untied, I found no reason to tie ) another boneless hack is to butterfly them all the way open, more barky goodness

Holy smokes!! That was a whirlwind. Started serving food at 11 and finished at 2PM. The manager told me to expect 50 people at most.
Well, she said it was way busier than they expected and way busier than ones they advertise a lot more. We served more than 84 sliders, 75 dates, and a ton of corn. People killed the dates, I expected those to be hit or miss, they were definitely a hit. We had people coming back 20 or 30 minutes later with their spouses to get more food. Even the kids loved the corn and sliders.
I got one picture, lol, around 10am when I first put some food on. I way underestimated my timing and finally got it all sorted out so there was steady fresh cooked food rotating in. I had a few 10 minute windows with no food because it got hit hard.
Overall, it was a blast and thank you guys for all of the suggestions and recommendations and encouragement.
Also, a shoutout to the helper the store gave me. This was a 17 year old kid who did freakin phenomenal with the help. This kid was non-stop all day.
Also, I was so glad I did the pulled pork last night and FTC it at 7am. It was so tender and juicy and made cooking the other items manageable while also talking and serving people.

I think we get spoiled on this forum. People seemed amazed and genuinely excited. A bunch of people asked how/what etc. Around here, this food is just everyday type cooks and barely warrants a post. As tired as I am, it was so much fun and energizing seeing people get excited and their face light up when they try something new!
We forget most people see grill and think: hamburger, hotdogs, special occasion steak.
Wish I had time to make the brownies because I had the mix sitting out and more than a few scoffed at the idea of brownies on a grill 😂Maybe your purpose in life is only to serve as an example for others? - LPL
