Buttermilk chicken, smashed potatoes, salad with mandarin, goat cheese & blueberry & chocolate pots

Was going to post this on the generic cheffing thread, but seeing all the recent feedback forum members, instead made this a standalone. 

Decided to make a fun dinner at home. Made Samin Nosrat’s buttermilk roasted chicken (amazingly simple and delicious; try it if you haven’t), paired it with a smashed potatoes recipe from Ricardo (with vinegar mayo dressing and fresh dill), and served with a salad featuring mandarins, blueberries, goat cheese and toasted pine nuts.  

Finished it with JIC’s SV chocolate pots for dessert, though these ones were the overflows, and so were served less than elegantly. 

We were agreeing that this was one of the most satisfying meals we’ve had in a good while. Highly recommend these recipes.

Cooked on the front porch MM for posterity.

    Me three! Looks killer.
    Got that Salt Fat Acid Heat book as gift couple of years ago but haven't made a dent in it yet, need to fix that. Thought about making the buttermilk chicken a few times, do they sell lactose free buttermilk? May have to settle for L.F. milk + lemon + vinegar.

    Thanks. The chicken recipe is dead simple. Super worth doing. I actually chambered two other buttermilk chickens, vac sealed them and froze them for easy hosting on short notice. 🙂

    Not sure about the lactose free buttermilk, but I am skeptical.

    Great googly moogly!! What a meal! And, wonderfully presented. Bravo, sir. 

    The salad makes me envious. I don't understand the parts well enough to put something like that together, but would definitely enjoy it.

     Buttermilk may be okay for some lactose intolerant folks (not necessarily for all), as it is a fermented food (lactose feeds the bugs in the culture). Yogurt, hard/more aged cheeses are well-tolerated by many. 

    Kefir could likely be subbed, but your idea for lactose free milk + acid is likely the easiest. Would you need both lemon juice, and vinegar?

    While I see that it’s rather pricey for you, I will emphasize that it’s been my favourite MM purchase over the years. Gets lots of use. 

    GrillPro even also sells a matching, weighted cast-iron press separately, such that you can do paninis and such. I use it less frequently, but it’s also nice to have on hand. https://www.thebarbequeshop.com/grill-pro-accessories-roasters-woks-and-baskets/grillpro-cast-iron-panini-press

    (Edit: And I should share that as a fellow non-American, I feel your pain re: availability of cool items and pricing. Always harder to find stuff and when you can, the costs can be exorbitant. Also, I should mention that I’ve had great success with a lodge Dutch oven that I’ve hacked the handles off of to fit neatly in the MM. I think it might have been you that also previously commented on a rib rack I use on the MM regularly. With a little ingenuity and spelunking, there are some great, compact options for cookware on the MM to be found.)

    Just be sure to account for the handles of anything you’re looking at, and know that they can be hacked off easily if desired.

    Great cook and the photos are magazine quality.  Beautiful plating.  I'm gonna have to give that chix recipe a go.

    I did a quick google on buttermilk substitute and caught a glimpse of few ingredients, didn't click to expand, probably overkill with lemon+vinengar.

    If you happen to use a whole lemon, zest it into the marinade. I think lemon zest makes a big difference, in just about any dish. Should be wonderful on chix.

    Thanks. Made them again this past weekend. The sauce that accompanied them is a mayo and vinegar-based mixture and the pairing with the crispy potatoes is pretty awesome, as it almost evokes salt and vinegar chips.
