Brisket on a stick SBGE

Options
Smoked a rack of short ribs on the small. Diced up and paired with BBQ beans and tater salad. The charcoal was “homemade” by a buddy of mine. Added one large chunk of pecan and let it ride at 250 until an IT of 195ish. FTC for a couple of hours until ready to eat. There were no leftovers. Pics in random order.
