This care package showed up today from @Ikapigian !!!
I have seen him posting cured meats for ages and seen his new sauce he is starting. Well, today I go to try some, and oh boy are they great!
I cracked into one of the meats, don’t know the name, type, etc but it is the “cleanest” tasting cured meat I have ever had. Has just a hint of sweet too. Just a great flavor blend all the way around. This makes me want to get into the cured meat game. Can’t wait to try the other two.
The hot sauces are amazing and totally unique. The rojo has a really good funk to it and the heat is perfect. It builds and is substantial, but doesn’t dominate the flavor like most “hot” hot sauces. I haven’t had anything like it, and can’t wait to pair it with some foods. I have been just eating it on club crackers and direct off a spoon, lol.
The verde is super well balanced and great flavor and heat. It has that great fermented funk and still the heat, but a little more of the traditional verde tomatillo flavor.
I hope he starts getting the ability to distribute because there is no other sauce like these on the market.
