Straight cook, no wrapping or 2-2-1 or whatever, just toothpick. All 3 had different temps prior to pulling from a slow cook on the XL varied between 194°IT to 204°IT…….fall of the bone? No, tender juicy and loaded with flavor, oh yeah.
Being a porkophile, My Beautiful Wife purchased this for me the last time we were in Napa, and gave it to me at Christmas:
A wine spout (snout), or maybe she was trying to insinuate something? Either way, I love it, fun and properly aerated the pour.

I had a couple of health issues I had to deal with, but things seem to be great as well.
Congrats on retirement, that window of opportunity is getting closer each day. I am mentoring those that will replace me, and my last major project has a target date of EOY 2025, so when it is done, then so am I. It may be much sooner as things are going really well.
