Birthday Brisket With Smoked Duck And Andouille Gumbo

Why not, it’s my birthday and 24 people are coming over for dinner.

    I was thinking the same as @JohnInCarolina.  Quite a spread right there.  Which rig is cooking the briskets?
    Louisville; Rolling smoke in the neighbourhood. # 38 for the win.  Life is too short for light/lite beer!  Seems I'm livin in a transitional period.
  • @lousubcap Big gravity unit.  I still haven’t smoked a brisket on the Shirley.  I had planned to use it for this cook but with too much going on timing was a major issue.  As you well know stick burners require 100% attention.
