Louisville; Rolling smoke in the neighbourhood. Life is too short for light/lite beer! Seems I'm livin in a transitional period. CHEETO (aka Agent Orange) makes Nixon look like a saint. -
@lousubcap Big gravity unit. I still haven’t smoked a brisket on the Shirley. I had planned to use it for this cook but with too much going on timing was a major issue. As you well know stick burners require 100% attention.

That is a sweet smoker I wish I had more people to cook for!South of Columbus, Ohio.

Really weird cook large brisket stayed in the stall for over 5 hours. The temperature dropped from 143 to 139 during that time so I finally wrapped at 140 and everything worked out perfectly. Really happy with the bark. Letting it cool now before the long oven rest.
