Strawberry Jalapeño Pancakes — OT

Kids wanted pancakes for dinner and my wife asked me what I wanted in mine. I wanted spicy, tart and sweet so I asked for jalapeños and diced up strawberries. She gave me the weirdest look ever and thought I was kidding. I wasn’t, and she caved in and made me some. 

The only way I ever want to eat pancakes now. Sweet Jesus.  Freakin amazing. You get that richness from the pancake, that spicy earthiness from the blossomed jalapeño, the sweetness and tart from the syrup and fresh strawberries. Nice thick cut bacon on the side and you’re set.

    My momma made us hairy pancakes once. I don't think it was on purpose either. She also made us hairy calamari and hairy langostinos, and I hate to admit it, but she made the best hairy Sunday dunk dinner I've ever had. It took all of my family, which I'd admit might not make up a total brain trust, three weeks of hairy food  ... before someone realized momma's arm hairs were just completely falling out and maybe she shouldn't cook until they've all fallen out and to test if they have, she can shake her arms across a giant tub of chicken salad and see if any hairs land on the chicken salad. Mommas a brunette, nothing stands out against chicken salad like a dark arm hair, or so I'm told.

    I felt a “WOWSERS” starting to surface upon the first bite, but contained myself to a muted “Sweet Jesus”, teardrop and a gaze into the distance. 😆
