Ukranian Shashlik/Armenian Khorovats

I'm making this for some Ukranian friends and looking at how it's done the skewers are suspended over the charcoal not cooked on the grill grates.  In looking for kabob racks there are several options but many of them are rather small or have bad reviews.  Has anyone found anything that will work on an XXL egg?  I'm contemplating just setting some fire bricks on the grill and suspending the skewers.  I have seen some people using the really long skewers and suspending them across the entire ceramic bowl but I have so many metal skewers already (12") I was looking for a solution that works with what I have.

    you could rig something but these look pretty easy, maybe a few sets. if it was me they would just sit on the grid, easier to move around and flip

    Your best bet is to take Firebricks , find a place in your yard , line ground with foil, set bricks on the ground so you can use the entire skewer and the bricks provide the perfect height, I have done it this way may times ...I'd get the long skewers 

    here is my Santa Maria converted the same way, also done in my offset on firebricks

    this is a much better option, skip the egg all together. and get some longer skewers or just make some. briquettes and firebricks, put something else on the egg like a couple tritips or something bbq'd

    I’ve done them on the BGE. I make two rows of bricks on top of the plate setter.  Then I get the lump red hot in a chimney, and pour it between the bricks.   Use skewers over the top - it works pretty well.

    By the way, I have tried the Serious Eats recipe for Khorovats and it’s really easy and always a crowd pleaser.

    In California they let you use a non-certified fire pit?  I figured you would have inspections, permits, architectural drawings, etc.

    You do have to submit to site/plan/review the type of foil, brick and coals you will be using along with a scaled drawing

  • Thanks for the feedback.  I think fire bricks is the solution.  I would buy those racks but some of the reviews comment on how flimsy they are when moving the skewers and I am not sure they are high enough off the grate for bigger chunks of meat and vegetables.
