Baby Back Queso Fundido

Got some leftover baby backs from this smoke with olive wood.
And got a block of boar’s head 3 pepper cheese from last night’s charcuterie board that was untouched. And some garden veggie cream cheese.
Also added in some mozzarella to smooth it out and cool it down some for the kids.
Into the slow cooker it goes with some milk. Will skillet it up and probably toss it under the broiler before serving. I’ll post later how it turns out. Sorta looking forward this one.

The leftover rib meat. Just added most of it to the cheese mixture. Throwing some chicken on the griddle for some tacos too, @Foghorn. Got plenty for ya.

Watching this one but being empty nesters, I'm not sure how much I could inhale in one continuous feed.

To say this was good is underrated. 🤤 Put most of the rib meat into the cooked queso, ladled and broiled some of the cheese mixture in the skillet, sat it over low on the Blackstone, topped it with the remaining rib meat and cooked up the chicken for the tacos. Pulled it when it was nice and bubbly. Added in some Tajin with lime seasoning to the rib meat and topped with cilantro.

Thx y’all. As you’ve prolly figured out, I will try to use up leftovers in different ways every chance I get. Figured I was safe with one last round of heating this up. Made Mac n Cheese with the remainder tonight. This will be my portion since it was still a bit too spicy for the family. Think I’m cheesed and ribbed out for awhile now.
